Wild Maine Blueberry Recipes
Blueberries are great fresh, and can be frozen, canned, and preserved easily to enjoy year-round. Here are some traditional Maine blueberry recipes you can try.
Blueberry Gingerbread
Cream shortening. Add salt then gradually add sugar. Next add unbeaten egg and beat until mixture is light and creamy. Mix flour, ginger, and cinnamon in separate bowl. In another small bowl measure sour milk (or buttermilk) and add baking soda to it. Stir until soda is dissolved. Add dry ingredients and milk mixture alternately to the creamed mixture. Add molasses. Add blueberries. turn batter into a 9"X9" greased and lightly floured pan. Sprinkle the 3 tablespoons of sugar over the batter and bake at 350 for 50 to 60 minutes. Can serve warm or cool with or without a whipped cream garnish. *If you do not have sour milk or buttermilk on hand, you can add 2 tablespoons of vinegar to a cup of milk to 'sour' it.
Warm Blueberry Toast
Combine blueberries, sugar, and water in a saucepan. Bring to a boil then simmer on low heat while you make your toast. Butter toast and spoon blueberries over it. serve with cheese slices or cottage cheese for a healthy breakfast or lunch.
Combine blueberries, sugar, and water in a saucepan and stew them over medium heat. Mix flour, baking powder, and salt in a bowl. Add milk to the dry mixture stirring quickly to make a dumpling dough that will drop from the end of a spoon. When sauce is boiling, drop dumpling (about 1 to 2 inches in size) into it. Lower heat a little and cover pan tightly. Cook for about 20 minutes. Spoon dumplings into shallow bowls and cover them with sauce. Top with cream or whipped cream if desired.
